Herbed Meatballs

- Servings: a lot! make some for now and freeze some for later
Ingredients
- (1lb) Ground Pork
- (1lb) 100% Grass-Fed Ground Beef
- (3 cloves) Garlic
- (1/2 cup) Olive Oil
- (3 cups fresh herbs- parsely, cilantro, basil, dill, mint, sage...any combo will do) Herbs
- (drained, 4 tablespoons) Capers
- (1/4 cup (ie: walnut, pepitas, pine nut)) Nuts/Seeds
- (one) Egg
- (1 Tablespoon) Paprika
- (2 Tablespoon) Salt
- (zest and juice from one) Lemon
Directions
Preheat oven to 425
MEATBALLS
finely chop garlic, 2 cloves are for your meatballs and one is for the sauce, place in separate bowls- one big and one smaller
chop herbs, divide in half between big and small bowl
chop capers, 3/4 to big bowl and remaining in small
chop nuts, all to big bowl
whisk an egg, paprika, salt and 1 tablespoon olive oil into big bowl
add ground pork and ground beef and mix with hands, don't overmix, leave it kinda chunky
form golf ball sized meatballs and place on a baking sheet
bake for 10 minutes and then stir, bake 10 more minutes (i always cut one open to make sure they are ready)
SAUCE
back to the small bowl--zest lemon onto herbs and garlic and then juice that lemon into the bowl. add 1/2 cup olive oil and mix well. season with salt and pepper.
