Herbed Meatballs
Herby Meatballs with Green Sauce
  • Prep Time:

  • Servings: a lot! make some for now and freeze some for later


  • (1lb) Ground Pork
  • (1lb) 100% Grass-Fed Ground Beef
  • (3 cloves) Garlic
  • (1/2 cup) Olive Oil
  • (3 cups fresh herbs- parsely, cilantro, basil, dill, mint, sage...any combo will do) Herbs
  • (drained, 4 tablespoons) Capers
  • (1/4 cup (ie: walnut, pepitas, pine nut)) Nuts/Seeds
  • (one) Egg
  • (1 Tablespoon) Paprika
  • (2 Tablespoon) Salt
  • (zest and juice from one) Lemon


Preheat oven to 425


finely chop garlic, 2 cloves are for your meatballs and one is for the sauce, place in separate bowls- one big and one smaller

chop herbs, divide in half between big and small bowl

chop capers, 3/4 to big bowl and remaining in small

chop nuts, all to big bowl

whisk an egg, paprika, salt and 1 tablespoon olive oil into big bowl

add ground pork and ground beef and mix with hands, don't overmix, leave it kinda chunky

form golf ball sized meatballs and place on a baking sheet

bake for 10 minutes and then stir, bake 10 more minutes (i always cut one open to make sure they are ready)


back to the small bowl--zest lemon onto herbs and garlic and then juice that lemon into the bowl.  add 1/2 cup olive oil and mix well.  season with salt and pepper.
